Ingredients for Carrot Ladoo:

  • Grated Carrot /Laukhi Compacted 3 C
  • Whole Milk 1c
  • Desiccated Coconut ½ C
  • Cashew ½ C
  • Almonds1/4 C
  • Soft Pitted Dates ½ C
    Ghee
  • Cardamom Powder ½ Tsp
  • Saffron few strands
  • Nuts Crushed for Rolling

Preparation Method for Carrot Ladoo:

  • Grate the carrot /laukhi using the larger side of the grater. Measure and 3 cups (tightly packed)and set aside.
  • Heat a heavy-bottomed pan .add ghee and the carrot and sauté for about 5 minutes.
  • Pour the milk and cook covered on low flame till the milk evaporates. Stir intermittently to avoid burning of the mixture.
  • Crush the nuts and dates in the pulser mode of the mixie till the mixture comes together.
  • The mixture should be coarse. Add it to the evaporated carrots along with desiccated coconut and cardamom. Mix the saffron in milk and add to the cooking mass.
  • Cook on low flame with constant stirring till all the ingredients come together and the mixture is semi-dry.
  • Remove onto a bowl. When warm make into laddus with your greased palms.
  • Roll the Ladoos in desiccated coconut or nut mixture as desired.
