The auspicious day of Vijayadasami… The victory of good over evil.. Lord Rama over Ravana.. Goddess durga over the demon mahishasura… Invoking her immense blessings the quick neivedhya today was a crisp urad dal vadai. An in between of the regular medhu vadai and milagu vadai.

Crisp Ulundhu Vadai / Urad Dal Vadai:

Ingredients:

  • Urad dal 1 cup
  • Green chilly 6
  • Curry leaves handful
  • Asafoetida 1 tsp
  • Salt to taste
  • Oil for frying

Preparation method:

  • Soak the dal for 4 hours. Drain.
  • Grind coarse without additional water along with the rest of the ingredients.
  • Pat into thin circles and deep fry till golden brown
  • Can add onions, greens, drumstick leaves, and cabbage to the batter.
