Vazhaithandu Karamethu Recipe | Banana Stem Thoran

Banana stem known as Vaizhaithandu in Tamizh, is the creamy white stalk of the banana tree an underrated vegetable which has been part of the Tamizh cuisine since ages. Vaizhaithandu thoran, Vaizhaithandu Elumichai Rasam, Vaizhaithandu Kosmali, pachadi….all delicious dishes made out of this fibrous nutrient-loaded stalk. Astounding is the fact that West Bengal has a well-documented splendid dish made of Banana stem-Thor Ghonto.

This crunchy textured and earthy flavoured stems, are a rich source of polyphenols and antioxidants. Rich in Vitamin B6, iron, and potassium the juice of the stem is a potent diuretic. Easily susceptible to enzymatic browning, the cut stem discolours quickly. To retain the creamy white colour, this vegetable should be cut into desired shapes close to the cooking process. The cut pieces should be immersed in water to which sour buttermilk or tamarind juice has been added to prevent the unpleasant brown discolouration.

VAZHAITHANDU KARAMETHU / BANANA STEM THORAN / STIR FRY

Ingredients for Vazhaithandu Karamethu Recipe:

  • Banana Stem 12-inch Piece
  • Grated Coconut ½ C
  • Red Chilly 3
  • Oil 1 Tbsp
  • Mustard Seeds 1 Tsp
  • Urad Dal/Black Gram Dal 1tsp
  • Chana Dal/Bengal Gram Dal 1 Tsp
  • Salt as Required
  • Butter Milk Thin 1 C
  • Curry Leaves Few

Preparation Method for Vazhaithandu Karamethu Recipe:

  • Take the banana stem and peel the outer thick fibrous layer with a sharp knife.
  • Slice the inner stem into thin discs and cut then into thin sticks. Keep dropping the cut stem into buttermilk–water mixture to prevent discolouration.
  • Take a heavy-bottomed pan, add 3 c of water and required salt and bring to a boil. When water comes to a rolling boil, add the cut vegetable and cook till soft.
  • Drain and set aside.
  • Take a heavy-bottomed pan, add oil and all the tempering. Fry till dals turn golden brown. Add the cooked vegetable and the grated coconut. Stir gently to mix. Remove and serve.

Simple & Delicious “Vazhaithandu Karamethu” is ready
