MILAGU-JEERAGA RASAM / PEPPER-JEERA RASAM
Ingredients for Milagu Jeeraga Rasam:
- Tamarind 1 Lemon Size
- Tuvar Dal/Red Gram Dal 1 Tbsp
- Pepper Corns 2 Tsp
- Cumin Seeds /Jeera 1 Tsp
- Red Chilly 4-6
- Red chilly for tempering 1
- Asafoetida 1 Tsp
- Salt as Required
- Curry Leaves Few
- Ghee 1 Tsp
- Mustard Seeds 1 Tsp
- Cumin Seeds for Tempering 1 Tsp
Preparation Method for Milagu Jeeraga Rasam:
- Extract the tamarind with about 600ml (3 cups) of water. Set it aside.
- Take a heavy-bottomed pan, Add 1 tsp of ghee, roast red chilly, pepper, and Tuvar dal till dal is golden brown.
- Grind to a smooth paste the roasted ingredients along with cumin.
- Mix the paste with the tamarind extract. Bring this to a boil along with required salt.
- Add half the quantity of asafoetida while boiling. Once it begins to froth on the sides lower the flame. And continue to simmer for 5 minutes. Switch off the flame and temper with mustard,1 red chilly, curry leaves, and asafoetida. Serve hot.
