Summer is in full swing and so are the mangoes in the 60-year-old tree in the backyard of my daughter in laws parental home. The first crop of plump green totapuri / bangalura/ kilimukku reached my house and the excitement began. All raw mango recipes were unearthed, and preparations were prioritized.

The raw mango, a storehouse of vitamin C, is a boon to diabetics due to its low GI. YIELD – 2/3

  • RAW RICE – 200GMS/1 CUP
  • GRATED RAW MANGO – 1 CUP
  • GRATED COCONUT – 1 CUP
  • GREEN CHILLY – 6-8
  • ASAFOETIDA – 1/4 TSP
  • SALT – AS REQUIRED
  • OIL – FOR PAN FRY

METHOD

  • Wash and soak the rice for 2 hours.
  • Grind it to a smooth batter along with all the ingredients.
  • Spread on a hot griddle into round discs of medium thickness and cook on both sides with a drizzle of oil.
  • Serve hot with jaggery/coconut chutney/butter/curd/morekootu

This light green adai/dosa is absolutely delicious with a medley of tangy, spicy and sweet taste. The batter does not require fermentation and can be made immediately after grinding. It is an excellent dish to be served during breakfast or dinner.

It has good satiating property due to its high fiber content. The quantity of green chilly can be adjusted to your taste.
