Maharashtrian Masale Bhath Recipe
Ingredients for Maharashtrian Masale Bhath
- Basmathi Rice 1 c
- Potato 1 big
- Carrot 1 big
- Brinjal 3
- Ivy gourd/tendli/kovakkai 6
- Green peas ½ c
- Onion 1 big
- Peanuts 1 tbsp
- Asafoetida 1 tsp
- Cumin 1 tsp
- Turmeric 1 tsp
- Cumin powder 1tsp
- Red chilly powder 1tsp
- Goda masala 1 tsp
- Jaggery 1 tbsp
- Ginger –garlic paste 1tsp
- Coconut milk thick 1 c
- Salt as required
- Ghee 2 tbsp
- Oil 1 tbsp
- Lemon 1
Preparation Method for Maharashtrian Masale Bhath
- Wash and soak rice in water for 15 minutes.
- Slice all vegetables into cubes or longitudinal pieces.
- Take a heavy-bottomed pan, add oil followed by cumin, asafoetida, and peanuts. Fry till peanuts are light brown.
- Add onions fry till translucent, followed by ginger–garlic paste. Fry well .add all vegetables and fry till half cooked. Add the dry masalas and mix well. Allow the mixture to fry well in the oil. Add the washed rice
- Pour the Coconut milk and 2 c of water. . Add the required salt. Cook on low flame till the liquid is all absorbed and the rice-vegetable mixture is well cooked.
- Drizzle ghee and lemon juice. Garnish with fried cashews if desired. Serve hot.
