Kalkandu Saadham/Baath (Sweet Rice With Sugar Candy)

Kalkandu Saadham Baath

  • RAW RICE – ½ CUP /100GMS
  • SUGAR CANDY – ½ CUP
  • MILK – ¼ CUP
  • SAFFRON – FEW STRANDS
  • CARDAMOM POWDER – A PINCH
  • NUTMEG POWDER – A PINCH
  • CASHEW/ALMONDS SLIVERED – 1 TBSP
  • GHEE – 3 TBSP
  • WATER – 2 CUPS

METHOD

  • Wash rice and roast in a pressure pan with 1 tbsp. of ghee till the rice grains look chalky. Add water, milk and saffron pressure cook till soft.
  • Mash the cooked rice and add the sugar candy and stir the mixture on low heat till the sugar candy dissolves.
  • Keep stirring on low flame till the liquid evaporates and the rice and sugar form a cohesive mass.
  • Heat ghee, roast the cashew/almonds .Switch of the flame and add the cardamom and nutmeg powder.
  • Add this to the rice and mix well .Cook for a minute and remove.
  • Serve it hot or cold.

This one pot ”kalkandu saadham” is a creamy delicious traditional dessert. A divine and quick”neivedhya “that can be prepared with minimal ingredients, this dish is also known as “ksheerannam’. Many add green gram dal to the recipe, but in my house this plain rice, milk and sugar candy is most preferred.
