CUCUMBER SALAD

SERVING – 1 (PORTION SIZE/SERVING = 1 STD CUP)

  • CUCUMBER DICED – ½ CUP
  • GRATED COCONUT – 1TBSP
  • CHOPPED GINGER – ½ TSP
  • ROASTED SESAME SEEDS – ½ TSP
  • CRUSHED ROASTED PEANUTS – 1TSP
  • SALT – TO TASTE 
  • LIMEJUICE -TO TASTE

METHOD

  • Put all the ingredients together and toss well.
  • Chill and serve.

VARIATIONS

  • TOMATO SALAD

Use ½ cup chopped tomatoes in place of cucumber.

  • CARROT TREAT

Substitute ½ cup grated carrots in place of cucumber. Add 1tsp of finely chopped capsicum and 1tsp of chopped cucumber to the ingredients.
