SERVING – 1 (PORTION SIZE/SERVING = 1 STD CUP)
- CUCUMBER DICED – ½ CUP
- GRATED COCONUT – 1TBSP
- CHOPPED GINGER – ½ TSP
- ROASTED SESAME SEEDS – ½ TSP
- CRUSHED ROASTED PEANUTS – 1TSP
- SALT – TO TASTE
- LIMEJUICE -TO TASTE
METHOD
- Put all the ingredients together and toss well.
- Chill and serve.
VARIATIONS
- TOMATO SALAD
Use ½ cup chopped tomatoes in place of cucumber.
- CARROT TREAT
Substitute ½ cup grated carrots in place of cucumber. Add 1tsp of finely chopped capsicum and 1tsp of chopped cucumber to the ingredients.
