Ingredients for Chole/Chana Masala Powder

  • Kashmiri Chilly 15
  • Bay Leaf 4
  • Black Cardamom/Badi
  • Elaichi 2
  • Cinnamon 3inch Stick 1
  • Cloves/Lavang/Lavangam 8 Pods
  • Coriander Seeds/Dhania 4 Tbsp
  • Cumin Seeds/Jeera 2 Tbsp
  • Pomegranate Seeds/Anardhana 2tbsp
  • Shahjeera/Caraway Seeds 1tbsp
  • Fennel Seeds/Saunf/Sombu 1tsp
  • Carom Seeds/Ajwain/Omum 1 Tsp
  • Black Peppercorn/Kalimirch/Milagu 1 Tsp
  • Dry Mango Powder. Amchur 1 Tsp
  • Nutmeg/Jaiphal/Jadikai Grated ½ Tsp
  • Broken Mace/Jadipathri ½ Tsp
  • Dry Ginger 2 Inch Piece Or ½ Tsp Powder
  • Kalanamak 2 Tsp
  • Kasuri Methi 1 tbsp
  • Asafoetida/Hing/Perungayam ½ Tsp

Preparation Method:

  • Take a heavy bottomed pan and heat till medium hot.
  • Add chilly, bay leaf and cinnamon and dry roast till aromatic. Remove and leave it on a plate to cool.
  • Add the rest of the ingredients except the powders and salt. Dry roast till aroma emanates. Cool and pulverise all ingredients to a fine powder. Add the remaining powders. mix well and store in an airtight jar.
