Ingredients for Chole/Chana Masala Powder
- Kashmiri Chilly 15
- Bay Leaf 4
- Black Cardamom/Badi
- Elaichi 2
- Cinnamon 3inch Stick 1
- Cloves/Lavang/Lavangam 8 Pods
- Coriander Seeds/Dhania 4 Tbsp
- Cumin Seeds/Jeera 2 Tbsp
- Pomegranate Seeds/Anardhana 2tbsp
- Shahjeera/Caraway Seeds 1tbsp
- Fennel Seeds/Saunf/Sombu 1tsp
- Carom Seeds/Ajwain/Omum 1 Tsp
- Black Peppercorn/Kalimirch/Milagu 1 Tsp
- Dry Mango Powder. Amchur 1 Tsp
- Nutmeg/Jaiphal/Jadikai Grated ½ Tsp
- Broken Mace/Jadipathri ½ Tsp
- Dry Ginger 2 Inch Piece Or ½ Tsp Powder
- Kalanamak 2 Tsp
- Kasuri Methi 1 tbsp
- Asafoetida/Hing/Perungayam ½ Tsp
Preparation Method:
- Take a heavy bottomed pan and heat till medium hot.
- Add chilly, bay leaf and cinnamon and dry roast till aromatic. Remove and leave it on a plate to cool.
- Add the rest of the ingredients except the powders and salt. Dry roast till aroma emanates. Cool and pulverise all ingredients to a fine powder. Add the remaining powders. mix well and store in an airtight jar.
