A pie with spinach and feta cheese filling encased between crisp phyllo sheets, these savoury bites make a wholesome meal with any Mediterranean salad. Popular on the streets of Chania, Greece, these savoury pies are also available as baked triangles.

For the Spinach and Feta filling:
- Chopped Spinach 2 Cups
- Dill leaves, Stems Trimmed, Finely Chopped 1 Cup
- Onion, Finely Chopped 1 Big
- Garlic Cloves, Crushed 2
- Olive Oil 2 Tbsp
- Feta Cheese, Crumbled 1cup
- Freshly-Ground Black Pepper 1tsp
- Salt As Required
For the Crust:
- virgin olive oil 1/4 cup
- phyllo sheets 8
Preparation Method:
- Preheat the oven to 180 degrees C.
- Heat a heavy-bottomed pan. Add oil. when hot sauté the garlic, onions, spinach, and dill leaves on low flame till the greens wilt. Add the required salt and mix in the feta cheese.
- Take a 9* 9inch tray, brush with oil, and line a phyllo sheet. Brush it liberally with oil and line 5 more sheets in a similar manner. Fill the spinach -feta filling. Cover with 2 more phyllo sheets brushed with oil.
- Seal the sides and bake at 180 degrees for 30-40 minutes till golden brown.
