A cold pudding with fruity flavours for a hot summer’s evening. A thick sauce of mango pulp combined with bananas and custard powder forms the base. Raspberry jelly adds to the fruity flavour and also gives the sauce a body. Chilled and poured over freshly cubed mangoes this “no sugar” dessert is not only naturally sweet but is delicious too.
Ingredients for Mango Raspberry Pudding
- Custard powder 2 tbsp
- Milk 500 ml
- Mango cubes 1 +1 cup
- Banana 2 small
- Raspberry jelly sugar-free 1 packet
- Chia seeds 1 tsp
- Milk 50 ml
Preparation Method:
- Make a thick custard with 500 ml milk and custard powder.
- Take 1 cup of mangoes and banana in a bowl and whisk well.
- Add the custard to the fruits and blend till smooth.
- Make jelly following the instructions on the pack and set well at room temperature.
- Whip the jelly and pour it into the custard fruit mix.
- Whip again till frothy.
- Set the fruity sauce in the refrigerator till use.
While serving take some chilled cubed mangoes in a cup and pour the mango – raspberry sauce over it and serve
