Vegetable Pasta (Mediterranean Style)
Ingredients for Vegetable Pasta Recipe:
- Pasta 4 C
- Diced Vegetables 2 Cups (Beans, Carrots, Capsicum)
- Cherry Tomatoes 1 C
- Peas And Sweet Corn 1 C
- Italian Herbs 2 Tbsp
- Chilli Flakes 2 Tbsp
- Garlic Butter 1 Tsp
- Olive Oil 1 Tsp
- Salt as required.
- Tomato Sauce ½ C
- Garlic Diced 10 Cloves
Preparation method for Vegetable Pasta Recipe:
- Take a pressure cooker. Add 8 cups of water and bring to a boil with a drop of oil and required salt.
- When the water comes to a rolling boil add the pasta and stir well.
- Cover the cooker and fit the cooker whistle. Cook on high flame for 2 whistles and switch off the flame.
- After 5 minutes, release the cooker pressure gently or place the cooker under a cold-water tap. Open and drain the perfectly cooked pasta.
- Take a heavy-bottomed span. Add oil followed by the garlic. Fry garlic till light brown.
- Add the tomatoes and sauté for a minute. Add the rest of the vegetables. Stir fry on high flame for 2 to 3 minutes.
- Lower the flame and cover and cook till the vegetables are crisp.
- Add the cooked pasta and stir well. Sprinkle the herbs and chill flakes.
- Mix well and place a cube of herbed garlic butter.
- Cover and switch off the flame. Drizzle tomato sauce and serve hot.
