Tomato Soup

SERVING – 1 (PORTION SIZE/SERVING = 1 STD CUP)

  • TOMATO – 200G
  • ONION – ½ SMALL
  • CARROT –  ½ SMALL
  • WATER  –  ½ CUP
  • BAY LEAF  – 1
  • CINNAMON – 1SMALL PIECE
  • SALT –  TO TASTE
  • PEPPER POWDER –  TO TASTE

METHOD

  • Chop the vegetables .Put in a saucepan along with water and spices and bring to a boil. Reduce heat and simmer for 15 minutes.
  • Remove the whole spices and blend the mixture in a blender.
  • Strain and bring the mixture to a boil along with salt and pepper.
  • Serve hot.

VARIATIONS

  • GREEN PEAS SOUP

          Substitute 125gms shelled peas for tomatoes.

  • SPINACH SOUP

Substitute 200gms of spinach for tomatoes. Garnish with 1 Tbsp fresh cream.

  • MIXED VEGETABLE

Substitute 200gms of vegetables (potato, turnip, cabbage, peas, beetroot) for tomatoes. Garnish with grated cheese.
