Carbohydrates or “carbs” as is referred to now is the predominant source of energy to our body. In recent times the word “carbs” has evoked a great feeling of hate and is often portrayed as a forbidden food. Carbs are definitely not monsters as one is made to believe. They are essential for good health and 55% to 60% of our total energy needs should be sourced from this nutrient. Apart from providing energy carbohydrates help body’s immune cells to communicate with each other thus improving our body’s protective mechanism. They also function as food to the gut friendly bacteria responsible for our intestinal health. For most South Indians rice is the major source of carbohydrates. Dinner tonight was a colorful and spicy tomato dosa made from a combination of raw rice and parboiled rice with a little addition of dals to improve the protein quality. Tomatoes and red chillies not only added to the color but taste and nutrition as well.
RECIPE
- Raw rice – 1 Cup
- Parboiled rice 1 Cup
- Black gram, red gram and Bengal dal – 1/4 Cup each
- Ripe tomatoes – 3 Big
- Red chilly – 10
- Salt to taste
Soak all ingredients in enough water for about 2 hours. Grind to a smooth paste along with salt. Leave it to ferment at room temperature for 3 hours. Make thin dosas on a hot girdle. Best eaten with plain curd or coconut chutney
