- Idly batter as required
- Potato boiled and mashed – 1/2 Cup
- Grated carrot – 1/4 Cup
- Chopped, parboiled beans – 1/4 Cup
- Fresh coriander chopped – 1 Tbsp
- Chilly powder – 1 Tsp
- Turmeric – 1/2 Tsp
- Salt to taste
METHOD
- Combine all vegetables and spice powders and required amount of salt .Shape them into flat discs
- Grease the idly moulds .Pour a little of idly batter, place a vegetable disc and cover it with more idly batter.
- Steam the idlies in a hot boiling steamer for 6 minutes.
- Unmold and serve with chutney of your choice.
This idly variation is not just healthy but the high fiber colorful stuffing gives one a pleasant surprise. This low fat fermented and steamed food makes an ideal meal for people of all ages and health conditions. The presence of vegetables improves the GI quotient of the dish.
