Spicy Vegetable Pasta (Indian Style)

Ingredients for Spicy Vegetable Pasta Recipe

  • Pasta 1 cup
  • Mixed chopped vegetables 1 cup
  • Onion finely chopped 1/2 cup
  • Chickpea black cooked  1 cup
  • Coriander leaves chopped 2 tbsp
  • Garlic pods 3-4
  • Butter 1 tsp
  • Fresh crushed black pepper 1 tsp
  • Tomato sauce 1/2 cup 
  • Salt as required

Preparation Method

  • Take a 2 litre pan with water and bring to a boil. Add a pinch of salt and a tsp of oil. Add in the pasta and cook al dente. (the pasta should be well cooked and at the same time stiff enough to feel the bite). Drain and keep aside. 
  • Take a heavy-bottomed pan. Add a spoon of butter, crushed garlic, and crushed pepper. Saute till garlic turns light brown.
  • Add in the chopped vegetables and saute till they turn tender.
  • Add the pressure-cooked chickpea and saute for another minute.
  • Add the tomato sauce and give the mixture a stir. 
  • Add the cooked pasta and mix well. Check for salt and add the required salt. Cover and keep for 5 minutes on low flame. 
  • Switch off the flame. Add the chopped onions and coriander. Mix well and serve hot.

NOTE: Vegetables most suited for this dish are Carrots, Beans, Peas, Cauliflower, Broccoli, Spring onions, Sweet corn & bell peppers

You can serve it with a liberal sprinkle of grated cheese, oregano, or mixed herbs and chilly flakes 🙂
