Ragi/finger millet/Kezhvaragu a gluten-free grain, which is a staple in the diets of the people of Karnataka. A special affinity to this grain has resulted in several delicious food forms which are gaining popularity the world over. Loaded with fiber, calcium, and iron it makes a perfect diabetic or weight loss/maintenance meal. The millet is so versatile that it can be combined with a host of other food ingredients to make delicious dishes.
Featuring today is a traditional Ragi Adai/Kezhvaragu Adai combined with vegetables and served with spicy peanut chutney. An apt meal for a healthy start to a glorious weekend.
Ingredients for Ragi Adai:
- Ragi flour 2 cups
- Grated coconut 1/2cup
- Chopped onions 1/4cup
- Green chilly finely chopped 3
- Vegetable mixed 1/4cup (boiled potatoes, grated carrots, finely chopped capsicum)
- Salt to taste
Preparation Method:
- Mix all the ingredients into a thick batter using the required water.
- Heat a girdle. Ladle a small portion of the batter and using water pat into adais as shown in the video.
- Cook on both sides with a drizzle of oil or ghee.
- Serve hot with peanut chutney.
