Potato Methi Curry

POTATO METHI CURRY

SERVING – 1 (PORTION SIZE/SERVING = 1/2  STD CUP)

  • POTATO  – 100G
  • METHI – 50G
  • GINGER – ½  PIECE
  • GREEN CHILLIES – 1
  • RED CHILLI POWDER – ¼ TSP
  • TURMERIC POWDER – ¼ TSP
  • OIL – 1 TSP
  • SALT – TO TASTE

METHOD

  • Wash, peel and cube potatoes.
  • Wash methi and chop fine.
  • Chop ginger and green chilli.
  • Heat oil, add ginger and green chilli and stir-fry for a minute.
  • Add chopped methi an sauté for 3 minutes
  • Add the spice powder, potato and salt. Stir well.
  • Reduce the flame, cover with a lid. Stir the vegetables occasionally till tender.
  • Serve hot with chapatti or rice.
