Poondu Arisi Kanji Recipe | Pathiya Samayal

The recipe that I am going to share in the lactation diet series today is a porridge prepared with boiled rice and a considerable quantity of garlic. I have used single-pod garlic because of its enhanced efficacy as a lactogue but this can be substituted with hill garlic too. This porridge can be eaten plain or with curry leaf chutney, rasam, garlic kuzhambu, sautéed vegetables… It can be had as a drink when diluted with buttermilk. 

This is a high-calorie moderate protein recipe and when combined with the above mentioned accompaniments it provides substantial amounts of vitamins, iron, and fibre. The presence of garlic imparts a good flavour to the breast milk thus improving the suckling reflex and ultimately improves lactation. The garlic and the spices in the recipe work on the maternal tissues as antioxidants, scavenging the free radicals produced during pregnancy and childbirth thus aiding in the healing process.

Poondu Arisi Kanji Recipe

Ingredients:

  • Boiled rice – 100gms
  • Single bulb garlic – 10
  • Pepper & cumin – 1 tsp each
  • Fenugreek seeds and ajwain – 1/4tsp
  • Asafoetida – A pinch
  • Salt to taste
  • Curry leaves – A few
  • Ghee – 1 tsp
  • Sesame oil – 2 tsps

Preparation Method:

  • Dry roast the rice. Take a pressure pan. Add the ghee and when hot add all the dry spices.
  • When they crackle add in the garlic and saute till glossy.
  • Pour 400 ml of water to the frying mixture and add in the salt.
  • When the water comes to a boil add the rice and pressure cook till soft.
  • Mash the mixture to a semi-solid consistency, add the sesame oil, and serve hot.
  • This porridge can be consumed by others too when they want to have a light meal or a quick drink.
