Paneer Paratha with Aam Ki Launji Recipe | Classic Combo 6

Parota, paronthey, parotha… Paneer stuffed paratha is a popular north Indian breakfast eaten with a good smear of butter and a tangy pickle. Here is a classic combo of Paneer Paratha paired with Aam Ke Launji, a sweet and sour pickle made with raw mangoes.

Paneer Paratha Recipe & Preparation:

Ingredients For stuffing:

  • Paneer 1 cup
  • Chilly powder 1 tsp
  • Turmeric powder 1 tsp
  • Coriander powder 1tsp
  • Salt as required
  • Chopped coriander leaves 2 tbsp
  • Mash the paneer and mix all ingredients well.
  • Make small roundels and set them aside.

Ingredients For the paratha:

  • 2 cups of wheat flour
  • Salt 1/4tsp
  • Oil 2 tbsp
  • Water to make the dough

Preparation Method for the dough:

  • Mix the salt with the flour.
  • Sprinkle water and knead into a soft dough.
  • Finally, add oil and knead till the dough is soft and pliable.
  • Cover with a wet cloth and allow to rest for half-hour.

To make the stuffed parathas:

  • Divide the dough into equal roundels.
  • Take one flour ball and stuff the paneer masala as shown in the video.
  • Roll into flat discs and cook on a flat girdle as shown in the video.
  • Serve hot with aam ki launji

Aam Ke Launji Recipe & Preparation:

Ingredients for Aam Ke Launji:

  • Raw mango 3 big cubed
  • Mustard seeds 1 tsp
  • Cumin seeds 1 tsp
  • Kalonji/onion seeds 1/2tsp
  • Fenugreek seeds 1/4tsp
  • Asafoetida 1 tsp
  • Turmeric powder 1 tsp
  • Chilli powder 1 tsp
  • Salt as required
  • Grated jaggery 1/2cup
  • Oil 2 tbsp

Preparation Method:

  • Heat oil in a heavy-bottomed pan.
  • Add oil and when hot temper with the whole spices.
  • Add the cubed mangoes.
  • Add turmeric, chilly powder, salt, and jaggery once the mangoes are soft.
  • Allow cooking till thick.
  • Remove and store in an airtight bottle under refrigerated conditions
