Ingredients for Veg Paneer Jalfrezi Recipe:
- Panner cut into 2 inches lengthwise sticks 200g
- Onions 1 big thinly sliced
- Tomato 1 big sliced
- Capsicum red, yellow & green 1 each cut into strips
- Carrots 1 big cut into a 2-inch stick
- Oil 1 tsp
- Cumin seeds 1 tsp
- Salt to taste
- Bhuna Masala paste 1 tbsp
- Tomato sauce 2 tbsp
- Kasuri methi 1 tsp
Preparation method for Veg Paneer Jalfrezi Recipe:
- Heat oil in a heavy-bottomed pan. When hot add the cumin. When cumin browns add the bhuna masala paste and stir well into the hot oil. Now simmer the flame.
- Add the vegetables. Turn the flame to high and stir fry the vegetables on high flame for a minute or two. Lower the flame, cover, and cook till the vegetables are tender.
- Ensure the vegetables are crisp but cooked.
- Add paneer and sauté well with the vegetables. Do not fry or over-cook the paneer. It should be a gentle stir. Add the tomato sauce and crushed kasturi methi. Check for taste and add salt. Care must be taken here as buna masala and tomato sauce have salt. Add a dash of sugar as a final finish.
- Remove and garnish with coriander leaves. Serve hot with roti or rice.
