Day 4 of navarathri. Goddess Kushmanda reigns supreme. It is believed that the galaxy and the world emerged from her cosmic egg. A bestower of warmth, her divine luminosity is the source of light and energy which manifest as the sun god surya. Her benevelont smile is said to eradicate the worldly darkness and misery. The white pumpkin is associated with this Devi and derives its sanskrit name Kushmanda from her.

- Pumpkin Halwa /Kushmanda Halwa/ Kasi Halwa
PUMPKIN HALWA/ KUSHMANDA HALWA/ KASI HALWA RECIPE:
Ingredients:
- Grated pumpkin 3 cups compacted
- Sugar 1 cup
- Ghee ¼ cup
- Cashew slivers few
- Cardamom powder ½ tsp
- Saffron strands few
Preparation Method:
- Place the grated pumpkin in a heavy-bottomed pan.
- On low flames cook covered till the pumpkin strands are soft and mushy.
- Add the sugar and stir till it dissolves.
- On low flame cook with intermittent stirring till the mixture thickens. Add the ghee. Save a teaspoon
for frying cashew slivers. - Keep stirring till the halwa leaves the sides of the pan.
- Switch off the flame. Add the cardamom and saffron. Fry the cashews in ghee and add to the halwa.
