Medhu vada… The south Indian favourite… be it a festival or a special breakfast spread has been converted into a lip-smacking roadside food, the Medhu vada chaat.

Ingredients for Medhu Vada Chaat

  • Medhu vada 4
  • Potato Boiled and mashed with a pinch of salt
  • Chopped onions
  • Chopped tomatoes
  • Chopped coriander leaves
  • Thick beaten curds
  • Mint – coriander chutney/green chutney
  • Dates chutney
  • Chilly powder
  • Roasted cumin powder
  • Chaat masala

Preparation Method

  • Place the vadas on a plate. 
  • Sprinkle some boiled and mashed potatoes followed by chopped onions, tomatoes, and green chilly. 
  • Sprinkle red chilly powder, roasted Cumin powder, and chaat masala over the vegetable layer. 
  • Add a lavish ladle of thick beaten curds. 
  • Drizzle some mint-coriander chutney and dates chutney. 
  • Top it with crushed potato chips, fine sev, and savoury boondhis.

NOTE: You can sprinkle some Pomegranate arils and coriander leaves for the final finish
