A delectable juicy accompaniment for poories and rotis…. This sweet and tangy subji is generally prepared during the navarathri fast to keep the energy levels going throughout the day. A “no onion, no garlic” preparation spiced and flavoured with simple ingredients.
INGREDIENTS
- YELLOW PUMPKIN CUBED – 2 CUPS
- TOMATOES CUBED – 1 CUP
- FENNEL SEEDS – 1 TSP
- FENUGREEK SEED – 1 TSP
- CUMIN SEEDS – 1 TSP
- SUGAR – 1 TBSP
- CHILLY POWDER – 1 TSP
- TURMERIC POWDER – 1 TSP
- OIL – 1 TBSP
- SALT – TO TASTE
- CHOPPED CORIANDER LEAVES
METHOD
- Heat oil in a heavy bottomed pan.
- Add the spices and when they brown add the cubed vegetables.
- Add the salt , sugar and spice powders.
- Saute, cover and cook on low flame till the vegetables become soft.
- Simmer till the vegetables are slightly dry. Add coriander leaves and serve hot.
