Kaddu ki launji/pumpkin launji

A delectable juicy accompaniment for poories and rotis…. This sweet and tangy subji is generally prepared during the navarathri fast to keep the energy levels going throughout the day. A “no onion, no garlic” preparation spiced and flavoured with simple ingredients.

INGREDIENTS

  • YELLOW PUMPKIN CUBED –  2 CUPS
  • TOMATOES CUBED – 1 CUP
  • FENNEL SEEDS – 1 TSP
  • FENUGREEK SEED – 1 TSP
  • CUMIN SEEDS – 1 TSP
  • SUGAR – 1 TBSP
  • CHILLY POWDER – 1 TSP
  • TURMERIC POWDER – 1 TSP
  • OIL – 1 TBSP
  • SALT – TO TASTE
  • CHOPPED CORIANDER LEAVES

METHOD

  • Heat oil in a heavy bottomed pan.
  • Add the spices and when they brown add the cubed vegetables.
  • Add the salt , sugar and spice powders.
  • Saute, cover and cook on low flame till the vegetables become soft.
  • Simmer till the vegetables are slightly dry. Add coriander leaves and serve hot.
