Dosa batter is a handy ready-to-make that is usually available at all times in most South Indian homes. I always make one batter for both idlies and dosa and the same fermenting is used for delicious utthappams and kuzhipaniyarams too. But one avatar that I really look forward to is bajjias/bajjis made with fermented dosa batter. The fermentation brings about a good leavening to the bajji batter. Its incorporation of gas bubbles and the release of the same during frying results in a light and crisp fried product. In fact the fermented dosa batter is a good substitute for cooking soda in fried products. The natural sourness enhances the taste of the bajji batter.
Ingredients for Dosa Batter Bajji:
- Dosa batter 1 cup
- Bengal gram flour /besan 2 cups
- Carom seeds /ajwain 1 tsp
- Asafoetida 1/2tsp
- Chilly powder 1 tsp
- Turmeric powder 1 tsp
- Salt as required
- Oil for frying
- Chaat masala for sprinkle
Preparation Method:
- Mix all ingredients with the dosa batter and beat till well mixed and fluffy.
- Dip the bajjis and deep fry till golden.
- Sprinkle chaat masala and serve hot.
