INGREDIENTS
- EGGS – 4
- MAIDA – 225 GMS
- BUTTER UNSALTED – 175 GMS
- SUGAR – 225 GMS
- VANILLA ESSENCE – 2 TSP
- DATES CHOPPED – 450 GMS
- CASHEW NUTS SLIVERED – 125 GMS
- BAKING POWDER – 1.5 TSP
- SODA BI CARB/COOKING SODA – 1 TSP
- BOILING WATER – 1 CUP ( 200 ML)
METHOD
- Take the boiling water in a pan add the cooking soda and dates. Allow to soak overnight.
- Cream the butter and sugar until light and fluffy.
- Break the eggs into a bowl, add a pinch of salt and beat till frothy.
- Add the flavoring and mix gently.
- Mash the dates.
- Sieve maida with baking powder. Sprinkle over the egg mixture and fold alternately with dates. Add this to the butter and beat gently. You may add milk if the batter is not to dropping consistency. Sprinkle the nuts.
- Grease a pan/ cake tin (8 inches diameter ) and pour the batter. Bake in a preheated oven at 180 degrees centigrade for 45 minutes.
