Bajji, bajjias, pakoda…. Call it by any name but these fried fritters are a delicious snack and synonymous with a rainy evening chai. Its taste, flavour and nutrition varies with the vegetable that’s used as a base ingredient along with bengal gram flour. The crispy treats can be made with onions, brinjals, bread slices, potatoes, chillies and the list is endless. Small variation in addition of spices brings about a whole lot of difference to its taste.
Basic bajji batter- Bengal gram flour – 1 cup
- Dosa batter – 1/4 cup
- Turmeric powder – 1 tsp
- Chilli powder – 2 tsp
- Ajwain seeds – 1/2 tsp
- Salt as required
- Water to make the batter
Mix all the above ingredients into a thick batter. The consistency should be that of thick idli batter.
Beat the batter well and use it to coat for bajjis
Paneer / bread slices / cheese slice / chillies / onions / brinjals / chow chow / potatoes / palak leaves
Coat in batter and deep fry in hot oil.
Serve hot with Tomato ketchup / Mint chutney / Coconut chutney
NOTE : Addition of fermented dosa batter will add to the crispy texture.
