Ingredients for Badam Puri:

  • Maida 1 C
  • SUGAR 2 C
  • BADAM/ALMONDS ½ C
  • SHORTENING -RICE
  • FLOUR 3 TBSP
  • GHEE 4 TBSP
  • CARDAMOM POWDER ½ TSP
  • SAFFRON STRANDS FEW

Preparation Method of Badam Puri:

  • Take a heavy-bottomed pan. Add the sugar with ½ c of water. Bring to a gentle boil and cook the syrup till it reaches 1 string stage. Set aside adding cardamom and saffron.
  • Soak almonds in hot water. Peel and powder/ make into a paste in a dry attachment of your mixer.
  • Take a bowl. Add the Maida and the badam powder/paste. Sprinkle water and make it into a stiff dough.
  • Mix the shortening into a fluffy paste and set aside.
  • Divide the dough into 2 portions. Roll each into a large thin chapati.
  • Smear the shortening.
  • Place the chapattis one on top of each other. Smear the leftover shortening over the chapati surface facing you. Roll the two together into a tight roll.
  • Cut the roll into 2-inch pieces.
  • Flatten the pieces and roll them into a poori.
  • Heat a mixture of ghee and oil. Heat to medium hot. Fry till golden brown. When a warm dip in the sugar syrup .
  • Remove onto a plate. Store after cooling.
