Kovil Dosai Recipe | South Indian Food Recipe

The “azhagar kovil” dosai is a special neivedyam offered to the Lord in the evenings at the Perumal temple of azhagar kovil close to the city of Madurai. This crisp and thick dosa is made with a mixture of hand-pounded rice flour and whole black gram dal batter and fried in ghee. Pepper, curry leaves, and ginger add not only to its flavour but also helps in the digestion of this rich and heavy prasadam.
Here is a recreation of this divine recipe at home.

Ingredients for Kovil Dosai Recipe:

  • Raw rice 1 cup
  • Whole black gram with skin 1/3cup
  • Dry ginger powder 1 tsp
  • Asafoetida 1tsp
  • Curry leaves handful
  • Pepper 1 tsp
  • Cumin seeds 1 tsp
  • Ghee 1 tbsp
  • Salt as required
  • Oil/ghee for pan frying

Preparation Method:

  • Soak raw rice in water for 2 hours.
  • Drain and air dry on a soft cotton cloth.
  • Grind the dry rice into a smooth flour.
  • Soak the dal for 2 hours. Grind to a fluffy batter.
  • Mix the flour and batter together along with the required salt. Adjust the consistency to that of an idli batter.
  • Ferment for about 4 hours.
  • Coarsely powder pepper and cumin
  • Add ghee, pepper, Cumin, curry leaves, ginger powder, and asafoetida. Mix well.

  • Pan-fry thick dosas in ghee or a mixture of ghee and oil.
  • Serve hot with mulagapodi
