Medhu vada… The south Indian favourite… be it a festival or a special breakfast spread has been converted into a lip-smacking roadside food, the Medhu vada chaat.
Ingredients for Medhu Vada Chaat
- Medhu vada 4
- Potato Boiled and mashed with a pinch of salt
- Chopped onions
- Chopped tomatoes
- Chopped coriander leaves
- Thick beaten curds
- Mint – coriander chutney/green chutney
- Dates chutney
- Chilly powder
- Roasted cumin powder
- Chaat masala
Preparation Method
- Place the vadas on a plate.
- Sprinkle some boiled and mashed potatoes followed by chopped onions, tomatoes, and green chilly.
- Sprinkle red chilly powder, roasted Cumin powder, and chaat masala over the vegetable layer.
- Add a lavish ladle of thick beaten curds.
- Drizzle some mint-coriander chutney and dates chutney.
- Top it with crushed potato chips, fine sev, and savoury boondhis.
NOTE: You can sprinkle some Pomegranate arils and coriander leaves for the final finish
