Paneer or the fresh cheese commonly used in India for various preparations ranging from curries to sweets and desserts. This calcium and protien loaded ingredient is very versatile and lends itself to quick cooking. Here is a simple stir fry that can accompany a flavoured rice preparation or rotis. INGREDIENTS
- PANEER CUBED – 200G
- CAPSICUM CUBED – 200G
- ONIONS CUBED – 100G
- CHILLY POWDER – 1 TSP
- TURMERIC POWDER – 1 TSP
- GARAM MASALA – 1 TSP
- SALT – TO TASTE
- OIL – 1 TBSP
- CUMIN SEEDS – 1 TSP
- CORIANDER LEAVES CHOPPED – FOR GARNISH
METHOD
- Heat oil in a heavy bottomed pan, add Cumin and wait fir it to sizzle.
- Add the onions and saute till pink. Add the Capsicum and saute for another 5 minutes on high flame.
- Simmer and drop in the paneer cubes. Add the spice powders and required salt. Stir well and leave covered for 5 minutes.
- Remove from flame and serve garnished with coriander. A squeeze of lemon will make the dish more flavourful.
