Vegetable sooji toast

Coarse whole grain breads followed by rustic dark breads and now super soft breads made with a melange of cereal and millet flours…. Breads have along history. We in India can be proud of the innovative recipes that have been created by us to suit our tingling palate…. Bread pakoda, bread idli, uthaapam, upma, bombay toast, bread dahi vada… Endless delicious food. Here is a super easy recipe that can be prepared with bread even if it’s stale. A quick breakfast, snack or even a meal that is absolutely lip smacking. Loaded with vegetables this healthy dish is pan toasted. A crunchy munch for all in the family.

 

The ingredients mentioned below is for 1 slice of bread. Step up the ingredients depending upon the number of slices that you would be using for the preparation.

SERVING – Bread Slice 1

INGREDIENTS

  • SOOJI /BOMBAY RAVA/SEMOLINA – 1 TBSP
  • GRATED VEGETABLES – 2 TBSP
  • CURD – 1 TBSP
  • CHILLY POWDER – A PINCH
  • GARAM MASALA – A PINCH
  • SALT – TO TASTE
  • BUTTER/GHEE – 1/2 TSP

METHOD

  • Mix the vegetables along with sooji, curd, spice powders and salt and allow it to rest for 10 minutes.
  • Check to see if the mixture is of spreading consistency. You can sprinkle a little water if required.
  • Take the slice of bread and spread the entire mixture evenly on one side of the slice.
  • Heat a tava /griddle. Brush with the butter or ghee.
  • Place the sooji side on the pan and allow to roast till golden brown on low flame. Flip to the other side and brown it too
  • Remove and cut diagonally and serve with tomato sauce.

NOTE

  • You can use any vegetable of your choice.
  • I have used carrots, cabbage and onions.
