INGREDIENTS
- EGGS – 4
- MAIDA – 200 GMS
- BUTTER UNSALTED – 200 GMS
- SUGAR – 200 GMS
- VANILLA ESSENCE – 1 TSP
- BUTTER ESSENCE – 1 TSP
- LIME RIND – 2 TBSP
- BAKING POWDER – 1 TSP
- SPICE POWDER – 1 TSP
METHOD
- Powder the sugar and divide it into 2 parts.
- Cream the butter and 1 portion of sugar until light and fluffy.
- Break the eggs into a bowl, add a pinch of salt and the remaining sugar and beat till frothy.
- Add all the flavoring and mix gently.
- Sieve Maida with baking powder and spice powder. Sprinkle over the egg mixture and fold. Add this to the butter and beat gently. You may add milk if the batter is not to dropping consistency.
- Grease a pan/ cake tin ( 8 inches diameter ) and pour the batter. Bake in a preheated oven at 180 degrees centigrade for 40 minutes.
FOR THE SPICE POWDER
- 25 GMS EACH – CLOVES, CARDAMOM, CINNAMON
- 15 GMS EACH – ANASI POO, MARATI MOGGU
- 10 GMS EACH – NUTMEG, BAY LEAF, CINNAMON
- 5 GMS EACH – FENNEL SEEDS, MACE (JATHIPATHRI)
DRY ROAST ALL THE ABOVE SPICES, POWDER THEM IN A MIXIE. SIEVE AND STORE IN AN AIRTIGHT CONTAINER.
